A journey through food, culture, and friendship. A story about different people from faraway lands who discover a fish unites them.

“A fish out of water” began as an adventure-foodanthropy film with a successful young Italian chef in pursuit to discover the historical origin of one of the most iconic Italian recipes - dried codfish, also known as Bacalà.

Lorenzo Cogo, together with a small crew embarks on an unusual adventure to uncover the true origin of codfish. They travel to Norway reaching the deep north of the country, where, in the cold waters of the Atlantic Ocean they come across a group of local fishermen whose livelihood depends on the codfish industry. Over the span of 10 days, Lorenzo not only learns about the roots of the stockfish and how it made its way from the Northern Atlantic Ocean to Italian kitchen tables more than 400 years ago, but he encourages the importance of supporting local producers by creating new recipes from traditional ingredients. Together with a Norwegian one-star Michelin chef, Mikael Svensson, they find new approaches to the stockfish tradition by creating 15 new recipes.

The essence of a recipe is not just in its taste or the ingredients it’s made from. The heart lies in what happens along the way of its discovery. Whom you meet, what you learn. Lorenzo is one of the youngest Italian chefs to receive a Michelin star. He comes from a tradition of chefs and is known for his instinctual cuisine based on respect for the raw material as well as the relationship with the client. Every dish is not the same. Food isn't just about the taste, but about the situation and place where you enjoy your meal.

The documentary follows Lorenzo’s determination to maintain the connection between two worlds linked by one fish and showcases a community’s heart, soul and struggle to maintain its traditions. He comes across many local personalities that give depth to the storyline and offer the audience access to unknown places through amazing landscapes and breathtaking cinematography. It is only through food and travel that our hearts and stomachs open themselves up to new experiences.

The scope of this documentary is to innovate, educate, connect and entertain people by visual documentation of two worlds brought together by one man, one fish, and two chefs.
